Sweet Potato & Lentil Soup
Ingredients
1 sweet potato – chopped4 parsnip – peeled + chopped¾ cup Red dried lentils1 brown onion – chopped1 clove garlic – minced2 teaspoons curry powderSalt / Pepper1.5-2 litres of waterServe with Greek yoghurt and coriander.
Method
In a pot place sweet potato, parsnip, lentils, onion, garlic, curry powder and water.
Cover and cook for 25 minutes until vegetables are soft.
Blend with stick blender or processor until smooth.
Serve with Greek yoghurt +Coriander
