San Choy Bau

Ingredients

  • 1 tbsp olive oil, plus extra to drizzle 
  • 500g pork mince 
  • 1 garlic clove, crushed
  • 1 onion, chopped 
  • 1 tsp curry powder 
  • 1 tsp smoked paprika 
  • 1 tsp turmeric 
  • 2 cups chopped vegetables – capsicum, broccoli, zucchini, mushrooms, etc. 
  • 1 tbsp oyster sauce 
  • 1 egg Baby spinach
  • sesame seeds, to serve

Method

Heat olive oil in a frying pan, then add the pork mince, garlic and onion. While the mine is browning, add the smoked paprika, curry powder and turmeric. Stir until mince is cooked.

Add the chopped vegies and oyster sauce and give a good mix. Crack the egg into the pan and mix well, along with a light drizzle of olive oil over the top. Bring to boil, then reduce heat to low, cover and simmer for 10 minutes before serving.

Put baby spinach in a bowl, top with the mince mixture and sprinkle with sesame seeds. So tasty!
