Sticky Date Pudding

Ingredients

  • PUDDINGS:
  • 1 1/2 cup dates 
  • 1 ¼ cup boiling water 
  • 1 cup buckwheat flour 
  • ½ cup rice malt syrup 
  • 1 tsp bicarbonate of soda 
  • ½ tsp baking powder
  • 2 eggs 
  • ¼ cup coconut oil melted 
  • 1 tsp vanilla bean paste 
  • Spray Olive Oil Sticky Date 
  • SAUCE: 
  • 2 cups pitted dates 
  • ¼ cup almond butter 
  • 4 teaspoons lemon juice 
  • ½ teaspoon sea salt 
  • 1 tsp vanilla bean paste 
  • Soaking water from dates – to get the desired consistency for your sauce

Method

Preheat oven to 180 degrees or turn on cupcake maker. Grease muffin tin or cupcake make with some spray olive oil. Soak 1 cup of dates in boiling water for 5 minutes then pop in the food processor with the rice malt syrup, eggs, bicarbonate soda, baking powder, vanilla bean paste and coconut oil. Process until smooth and combined. Pour into a bowl. Chop the ½ cup of left over dates into small pieces and add to the other ingredients then sift buckwheat flour into the bowl and mix through until combined and then spoon into a muffin tin or cupcake maker and cook for 10 minutes or until cooked. Place puddings on cooling tray.

Sauce: Boil dates for 5 minutes, place in food processor along with other ingredients (except the soaking water) and process until combined. Pour into a jug or bowl, slowly add soaking water until you get your desired consistency. Enjoy x
