Macadamia & Fennel Seed Salmon

Ingredients

  • 4 salmon fillets
  • 1 cup macadamia nuts 
  • ½ cup fresh chopped parsley 
  • 1 tablespoon fennel seeds 
  • Salt / Pepper to taste 
  • 1 egg 
  • 1-2 tablespoons Rice bran oil

Method

Whisk egg in a bowl and put aside.

In a food processor add macadamia nuts and process until they form a small crumb. Then add in parsley, fennel seeds and salt/pepper, process again until combined and place in a bowl.

Dip salmon into egg wash, then roll into nut mix until salmon is coated.

In a non-stick pan add in rice bran oil, cook salmon for 2-3 minutes on each side.
