Turkey Bolognese
Ingredients
500 grams Turkey mince2 tsp Rice bran oil2 cloves garlic minced1 large onion chopped1 zucchini grated1 carrot grated6 button mushrooms chopped1 can crushed tomatoes1 140 gram tomato paste1 tsp oreganoSalt + Pepper to taste½ cup waterHandful of fresh basilChilli – optional
Method
In a pan add rice bran oil, turkey mince, garlic, onions stir until mince is cooked. Add zucchini, carrot, mushrooms, tomatos, tomato paste, oregano, salt, pepper, water – bring to boil then rip apart basil leaves and add to pan, cover and simmer on low for around 20 minutes.
Serve on a bed of spinach leaves or some zucchini pasta.
