Black Bean Dip
Ingredients
½ cup (115g) tinned refried black beans3 thin strips capsicum, plus extra for garnish1 tsp smoked paprika½ tsp curry powder½ tsp cayenne pepper (optional)2 tsp apple cider vinegar1 carrot1 cucumber
Method
Put the black beans, capsicum, smoked paprika, curry powder, cayenne pepper and apple cider vinegar into a food processor and process until smooth.
Slice carrot and cucumber into sticks.
Spoon dip into a small bowl and serve on a plate surrounded by veggie dipping sticks.
