Blue Eyed Cod + Mash
Ingredients
2 fillets blue eye cod or similar white fish1 cup cherry tomatoesHandful of basil1/2 teaspoon chilli paste1 teaspoon lemon juice1/2 avocado1 teaspoon paprika1/4 cup pine nuts1/2 sweet potato chopped1/4 head cauliflower
Method
Steam Cauliflower and Sweet potato till they are soft then mash. Cook the fish on sandwich press or in a non stick pan. While this is cooking put the remaining ingredients in the food processor and puree. Place the fish on bed of the puree and serve with the mash and your favourite salad. Sprinkle the fish with chilli flakes.
